Fresh Strawberry Loaf Cake






Lockdown has well and truly re-ignited my love of baking. I'm not the best at presentation but the actual taste always seems to work out well (or it has up until now)! This is one of my favourites I've made so far - fresh strawberry loaf cake. It's really pretty simple to make, doesn't require anything out of the ordinary and tastes amazing. 



Ingredients are: 

  • 3/4 cup granulated sugar
  • 2/3 cup oat milk
  • 1 large egg
  • 1 teaspoon vanilla extract 
  • 2 cups plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • cups diced strawberries
  • 2 tablespoons plain flour



Method

  • Preheat the oven - My only problem is I made this on an Aga so I can't tell you what heat you'll need your oven at! However if you're making this and used to baking in your own oven, go with whatever temp you'd usually set it at! 
  •  Stir together the sugar, milk, oil, egg and vanilla. In a separate bowl, combine the sifted flour, baking powder and salt. Add the dry ingredients to the wet ingredients and stir until just mixed.
  • Toss together the strawberries and the 2 tablespoons of flour to coat the strawberries. Gently fold the now floured strawberries into your batter.
  • Once it's all mixed together, pour the cake mixture into a baking paper lined loaf tin. Bake in the AGA for 30 minutes (or until a golden brown on top). A skewer inserted in the center of the cake should come out clean once cooked. AGA's generally run hotter than electric or fan ovens therefore I'd give the cake 40 minutes before checking on it.
  • Once baked, allow to cool for 10 minutes before removing it from the tine and placing on a wire rack to cool completely.



And there you have it. A very quick and easy fresh strawberry loaf cake. If you're feeling extra fancy you could create a strawberry glaze for the top which is really simple to make: 

Combine 2 cups of icing sugar, 2 tablespoons of melted butter, 1/3 cup of very finely diced strawberries and 1/2 teaspoon of vanilla extract in a small bowl. Mix until it is smooth and pour over the top of the cake.
